Forest hike to Twin and Snoqualmie Falls
This half day tour is a combination of a moderate 2-hour hike (a few inclines for five minutes) to the Twin Falls close up and a visit to the famous Snoqualmie Falls. I will pick you up in downtown Seattle and drive eastward for about 30 minutes until we arrive at the trailhead. We will hike in old growth forest along Snoqualmie River to Twin Falls and the Upper Falls (1.3 miles), which is a beautiful cascade of waterfalls. After the hike we will drive through North Bend, where the diner from the popular tv show "Twin Peaks" is located and through the historic logging town. Snoqualmie. The locomotives of the time are still on the railroad tracks and the old depot from the year 1890 is in use till this day. We stop to view the Snoqualmie Falls of 270 feet - followed by driving along Borst Lake, where Mount Si is reflected in the often still lake - and then drive back to downtown Seattle.

We will take you on a culinary tasting adventure of Pike Place Market. We will be stopping at 9 different artisanal vendors; learning about local production and tasting your way through the flavors of the Northwest. You will be guided by a professional naturalist guide on your journey to Snoqualmie and Twin Falls. You will learn about the natural history, human history and hear interesting stories about the inhabitants of this unique environment! This is a 4 hour tour with a convenient pick up and drop off location near downtown Seattle. The hike will be about 1 mile easy round-trip with an option for a 2 1/2 mile extension for the experienced hikers! Please note that we will wait to start the tour up to 15 mins late if you are running behind. Pyschedelic Mushroom Growing in Seattle
This truly "only in Seattle" experience teaches how to grow your own psychedelic mushrooms from low cost supplies using a method you can easily replicate in your own home, wherever you live. Please plan to bring four pint sized mason jars with lids and rings. I can describe them in more detail after you book. I provide all other supplies. Because of a 2021 ruling from the Seattle City Council that decriminalizes the cultivation of psychedelic fungi for “religious, spiritual, healing, or personal growth practices", I am able to offer this class completely legally. We'll talk about the evolutionary history of fungus, how different cultures have used and valued psychedelic experiences, and the entheogenic health movement. I leave time for questions, and do my best to customize this experience for you. At the end of this 2.5-3 hour class, you'll leave with your own custom mushroom grow, and instruction on how to start your own tiny psychedelic mushroom farm. I have a unique background as a forager and published health researcher. I bring a unique mixture of knowledge on health, ecology, and mycology. We’ll meet at my cooking class kitchen and walk to the local seafood market where you’ll find different Sushi ingredients. Then, we’ll go to my kitchen for a hands on Sushi making lesson. I’ll show you how to make Sushi rice and how to create Sushi rolls that is unique, and delicious. You will plate your coveted Seattle Sushi rolls with your own design. You will roll 3 Sushi rolls and devour your own creations. Other things to note Guests must be able to walk for 30 minutes. Guests should let the host know about food allergies, or any special dietary restriction, and what types of food that they love to eat.
Hike the Gorgeous Trails in Washington
First, we will decide on the day's hike based on your hiking experience and what you'd like to see (mountains, waterfalls, lakes, etc). After we pick our destination, we will drive to the trail where we'll stretch to ensure we don't pull a muscle and then get right into it. Make sure to bring snacks and a camera (optional) for the hike! I will also have a camera to capture photos and videos of our experience together that I will send to you at the conclusion of the trip! You will come to my private kitchen to learn to make Hum Bao (steamed buns) and pot stickers. I will purchase various pot sticker wrappers, meat and vegetables from a local store for the class. Experience stars at 12:45 and 8:45, not the times listed! This tour of Capitol Hill will equip you with the knowledge and skills to find your own edible plants in almost any urban environment. Starting at Black Hole Sun in Volunteer park, I will guide you through one of the prettiest neighborhoods in the city. I'll teach you about best practices in foraging, acknowledge the indigenous stewards of the land, and help you identify some of the most common plants that you can harvest on your own. Along the way, we'll talk about the unusual geology that makes Seattle what it is, spy on street cats, and cover some of Seattle's strangest history. Every attendees leaves this trip with a handful (or more!) of something wonderful we've found along the way. Depending on the season, it could be fir tips, feral apples, herbs, flowers, or nuts. While I am not an herbalist, chef, or doctor, I'm happy to share ideas for preparing what you find, and traditional uses for herbs we come across.

This is an ever-changing and high concept drink fusion playground (aka. laboratory) for those with 0 to 100 levels of experience. This particular lab is experimenting with non-alcoholic drinks, aka. mocktails. For those who prefer alcohol and/or cocktail lessons, please see the other lab I host: the 'Mad Scientist Cocktail + Mocktail lab". This particular drink fusion laboratory allows us to more easily accommodate ages under 21, and focus on fun alternative libations to liquor, wine and beer. I will begin the lab by introducing you to all the tools and ingredients available. Multiple printed recipes will offer a starting point, and as you take off on your own concocting direction, I will be present to offer guidance and answer questions. During our chocolate factory tour, you will learn in detail how we craft chocolate starting with cocoa beans and ending with wrapped and sealed chocolate bars. We'll discuss: 1. How cacao is grown and where it comes from. 2. How we clean and sort our cocoa beans before production. 3. How we roast, grind, and conche our chocolate to maximize flavor and aroma. 4. And how we temper, mold, and wrap our chocolate bars. We'll also get to examine raw cocoa beans, taste some chocolate in production, and sample a variety of finished chocolate bars with unique flavor characteristics.

If there are multiple people or families in the group, we will rotate in and out to make sure everyone gets pictures in each location!
