Steaming bowls of ramen demonstrate the kitchen’s soft-spoken aptitude for coaxing maximum flavour from ingredients — the miso ramen, in particular, is a quiet riot of simmered chicken and pork bones, umami-packed miso, flavoursome chashu and tender bamboo shoots.
