I will be on vacation September 23 to October 9th I will get back to messages upon my return. After picking you up at your downtown Toronto Airbnb or other convenient location, we will start your adventure to Niagara Falls. Along the way we will stop at several picturesque waterfalls, a family owned bakery* and an award winning winery. During short walks along tee lined paths at these smaller falls, you’ll learn about the geology of the area followed by delectable treats from a local bakery (extra cost, hours vary). Then, we’ll hop in the car and continue to Niagara's wine region, where we will stop for a tasting (including ICE wine) at one of Niagara Regions most award winning wineries. After a delicious sit down lunch, we’ll go to the world-famous Niagara Falls where you will bathe in the mist from the Falls as we walk along the rim of the Niagara Gorge. We will have more than enough time for guests to take the optional, self led, Niagara Boat Cruise (in season when available). Following our visit to the upper edge of the mighty Horseshoe Falls we will return direct to Toronto. *The bakery is closed on Mon. & Tue. We stop at a local coffee shop instead. A Walking Tour of Toronto's Underground City
Winters in Canada can be very cold. Participating in an outdoor activity can be uncomfortable, especially if you are not used to the cold weather. This tour makes a winter walk much more pleasant by using Toronto's PATH network to move from one downtown sight to another. Only on 3 occasions will we step outside for a few minutes to have a look around at what lies above. The city's PATH network is over 30 km (20 miles) in length, and connects 70+ buildings in the downtown core. The PATH has 8 hotels, 5 subway stations, an arena, a shopping mall and City Hall attached to it. On each work day, an average of 300,000 people use PATH to move from office tower to office tower. Wakeboard & Wakesurf Toronto
Come for a ride aboard a Super Air Nautique G23 rated the best tow boat in the industry and see Toronto in a way you can't see from land. If wakeboarding or wakesurfing is something you've always wanted to try or just get better at here's your chance. You will be taught everything from how to get up for your first time to some basic turns. In between your sets on the water you can relax in the boat, listen to some music and check out the beautiful Toronto skyline. Its also a great time to enjoy watching others ride and get some great pictures. Each guest will get the opportunity to wakeboard or wakesurf for 2 sets on the water and the experience will last about one hour for each person on the boat and will only last 4 hours if there Is 4 guests

Mushroom & Wild Edibles Hike
Our Mushroom Workshop takes place during a rejuvenating 4 hour nature hike on the trails of a 400 acre conservatory gem with flora ranging from old-growth forest to seasonal food plants. We will uncover new worlds of uncultivable, wild edible plants in their natural forest state. We seek a multitude of delicious edibles (when in season) such as Yellow Chanterelles, Black Trumpet and Cinnabar Chanterelles, Hedgehogs, Boletes, Oysters and my personal favorite - Lobster Mushrooms. Growth is weather and seasonal dependent. You will learn to identify these and other seasonal edibles such as specific growth edible mushrooms, and will be introduced to spore printing. In the spirit of respect for the bio-system we will explore, you will be introduced to ethical harvesting, long term sustainability and propagation for future generations.

Blacksmithing Experience - Forge in Fire
Experience the ancient art of blacksmithing with this fun introductory class for beginners! In this workshop you will learn the fundamentals of forging - sculpting hot metal with a hammer and anvil as you create your own custom iron hook or small ornament! You will be working hands-on with Artist-Blacksmith Jen Lipski in her private studio located in rural Niagara. Each participant will heat up their own piece of metal in the forge until it glows red-hot and then hammer, bend, and twist it into your own unique piece of ironwork! Don't be intimidated by the art - projects are available with varying levels of difficulty to accommodate different skill levels, and you will be guided step by step as you forge your new metal hook or ornament to take home!
A Ghost Walk of University of Toronto
For a young city like Toronto, you would think there is not a lot of ghosts, but strangely we do. University of Toronto and it's surrounding area has many buildings that are hunted. As a group we will walk to these buildings (we are not able to go in) and I will share the stories of the ghost that inhabit these dwellings. It will be one interesting tour. Where the tour will end: We will end in front of the Royal Ontario Museum which is close to a few subway stations in the area. Please don't hesitate to ask about what to do in Toronto. Canoe & Hike Through Algonquin Park History
When picturing Algonquin Park, what likely comes to mind are images of nature trails, campgrounds, and a seemingly endless wilderness, untouched by man. What if we told you that during the nineteenth and early twentieth centuries, Algonquin Park was more like a bustling port of people? Come learn about the park’s intriguing past through this day trip which combines both paddling and hiking for a full day’s adventure. The paddle and hike will take you through some of the park’s modern human history, which your guide will be happy to share with you! You will begin your day by meeting at the Cache Lake Access point #8 in Algonquin Park. Your guide will greet you there. They will deliver a Waiver of Liability for you to read and sign. After a short introduction to canoeing, you will then paddle across the lake to a portage along the Madawaska River which merges with the Track and Tower Hiking Trail. Upon your arrival at the portage, you will leave your canoe to hike up to the lookout, which is a moderate 20-minute hike, at the top, you will stop for lunch. Once we've had a chance to take in the views we will hike down to reunite with your canoe. From there you will continue paddling Cache Lake. The journey continues through a smaller channel into Lake Tanamakoon where there is the option of swimming and exploring the lake. After that, you will paddle back to the access point.

Toronto Harbour Sailing with the City Skyline View
We will depart on this spectacular adventure after the sunset, from the beautiful Toronto Islands location. While we gently cruise under sail or (depending on the wind conditions) with a quiet electric motor across the Toronto harbour, you will be treated to stunning views of the night city skyline views. During this experience, I could introduce you to some basic sailing and you would have a chance to be at the helm as a captain. I could also help you with taking some nice photos with the use of yours or mine phone. After one hour cruise, you would be dropped off at the Toronto harbourfront location.
Historic Niagara Falls-A day trip from Toronto
In this trip, you'll explore not only the Niagara Falls but some of the major historic landmarks in #Niagara Escarpment area that majority of tourists are not aware of. Our first destination will be "Niagara Glen (The Gorge)". Here you'll see 400 million years old Limestone Rocks. You will also witness interesting history of creation of Niagara Gorge during over 10,000 years by the erosive power of the falls. Then we'll take a small hike in the woods to see the actual battlefield of 1812 and the 'Historic Cannon' that was used in the battle . "Laura Secord Homestead” is our next destination. Laura Secord ranked 35th among the Top 100 "Greatest Canadians" for showing her bravery in the 'Battle of Beaverdams'. After that, we'll go for wine tasting (extra cost) in a family owned cozy brewery where you'll learn about the unique steps of making "Ice Wine", starting from harvesting the frozen grapes to the entire process. Our final destination is world famous "#Niagara Falls"...Here you will have plenty of time to enjoy the scenic beauty of this wonder of the nature. We will spend approximately 2 hours on the falls and explore every inch from inside out. I am pretty sure you will remember these memories for the rest of your life. Join us for a day tour to Niagara Region. We will start with short hike at Ball's Falls Conservation area. Than we will visit local winery and maple farm. The experience is a 16 course gelato tasting with a visit to the gelato lab where all the creative flavours are tested & produced. During the tour I will explain the differences between Icecream & gelato , the science behind gelato, production of gelato and the history behind the company. My unique back ground of being a chemical engineer and a chef will give you a unique perspective of the art of gelato. We have flavours that are seasonal and creative. A small apartment in the heart of leslieville, one is welcome to come by with their dining partner/ partners (max 6 people) and as I walk you down a gastronomic tour of my culinary experieces from learning how to make a simple bisque from my father in a miniscule kitchen in Calcutta, therein working at michelin starred kitchen, Le Gavroche, London at a tender age etc. The evening dishes are mostly driven through the dogma of being aware of seasonality and produce and above all technical skills. Every menu is created the morning of the dining experience. Moreover for the curious of hearts, my sous chef andI would be cooking and baking dishes such as Beef wellington and dover sole bonne femme six feet away from your seats, giving you a true peek into the world of fine dining in top kitchens. All this is in an evening's worth of time spent leisurely drinking and eating delcious meal in great company and hopefully the best story to tell in the forseeable future.
