What you'll do

Getting to know the herbs and spirits of Greece. We will then explore modern cocktail production, techniques and tricks, equipment and materials. Finally we will create tailor made cocktails based on the available herbs and spirits.

Herbs: recognising and collecting. Uses in traditional and ancient medicine, historical background, preparation techniques, infusion, reverse pressure, bitters and more. Oregano, Basil, Thyme, Sage, Glyfon, Lavender.

Greek spirits and their origins. Similarities and comparison to other Mediterranean countries. Ouzo and its history, Suma, Tsipouro, Raki and other distillations. Tendura and Mastiha, Almond liquors, lemon, mandarin and other citrus trees, vermouth making. Rakomelo and the use of thyme honey in cocktails and other alcoholic beverages.

Cocktail techniques, stirring, blending, building, shaking. Use of ice. Fruits, herbs and bitters. Elements of taste, balance, creativity, decoration.

A notebook will be provided so you can write down recipes that you like or any info that was interesting!

I am a bartender, for almost 30 years. I have studied classic history and archaeology (BA Deree College and MA in Durham UK). I am interested in organic agriculture, beer and wine making , spirits and their production. I have also worked as an arts curator at the Museum of Modern Greek Art and I am an active singer with blues band PAPA LEGBA and rock BLUE ORANGE, where I play guitar and bass. Organising beer and wine tasting events, creating cocktails and exploring the qualities and tastes of Greek herbs. I am also co-organising Rhodes Jazz Festival for the last 5 years! This year I will be exploring my culinary interests, trying to present modern greek tapas in a bar environment!

We had a great afternoon with Zafiris who created amazing cocktails using local spirits and fruits for us. I can definitely recommend this experience to everyone enjoying good drinks and a beautiful surrounding.

What we loved about Zafiris was his way of involving you in the story and process of making the cocktails. We tried experiments to see if shaking or stirring a martini made a difference to the taste (it did), Zafiris told us about his experiences making and using local herbs and spirits to make new cocktails, and he always tailored things to our particular tastes, but also pushed us to try new things. A real exploration and a lot of fun. One of the highlights of our time in Rhodes.

This is a great way to learn about spirits of Rhodes and Greece. A great way to start out the evening and meet a local that has many experiences to share beyond cocktails, but the cocktails were excellent and recipes I will use at home if I can find good Suma.

Zafiris is bartender and owner of Bar Boheme. He knows a lot about local Distillation, making sirops of local fruits and herbs. This is the base of special coctail mixing. Creative and artistic, and pleasant. He tells nice storys about all drinks and techniques. Final he shows the real James Bond cocktail: shaken one AND the stirred one, taste the difference and see for yourselfs. Nu iets in het Nederlands: Zafiris, dank je wel voor de zeer aangename uurtjes in je bar en alle techniekjes die je ons vertelde over Hogere school- coctail maken. Een ervaring die we allemaal niet snel zullen vergeten. We bevelen je experience aan op airbnb en hopen dat veel gasten van je uitleg en cocktails gaan genieten! Dank je wel. This was a must-do in Rhodes/Rodos for us. A very unique experience which was a combined lesson on the history of cocktails and a really fun experience just trying out a number of different cocktails (essentially globally inspired drinks all with a Greek flair). The cost is basically the cost what your cocktails on this experience would normally be, but you also get a 2 hour experience from an expert included. We felt we might be taking a gamble on this given that it did not yet have any reviews but it was more than worth the risk. 100% recommend and I hope he gets the chance to share this experience with many others.
