What you'll do
Dashi, Japan's all purpose soup stock and seasoning, is what gives Japanese cuisine its unique flavor. It can be said that making a great tasting dish is solely determined by the quality of the dashi. We'll get exclusive access to one of the Japan's traditional restaurant and to its central kitchen. First, we'll see how a bonito(the main ingredient) is shaved by hand and by machine and taste some of them. Then we'll walk to the restaurant, where we will taste 5 different kinds of dashi made from different fish. Each of us will blend them to make the perfect dashi. Noodles will be serviced by the restaurant to enjoy the freshly made dashi soup of your own.

Where you'll be
I'll guide you to the central kitchen of Mimiu, a Japanese traditional restaurant where they shave the bonitos. From there, we'll walk to the restaurant where we'll experience the cooking and the blending. The restaurant is located in the heart of Osaka city.

Up to 8 guests ages 18 and up can attend. You do have to be non-allergic to flower and buckwheat.
