What you'll do
You'll begin by choosing two liquors from the soju, single malt whisky, bourbon whiskey, vodka, rum, brandy, and wine that we'll have available. There are at least 10 single malt whisky brands famous in Korea. I will then teach you how to make 12 of your own liquor chocolates—six chocolates per liquor. You'll use a different chocolate mold for each liquor. You will fill the chocolate shells with a liquor ganache, and cover this with dark chocolate to prevent any leakage. You will use special Korean ingredients instead of sugar here. After that, we will take a break and you can ask me about the Korean whisky culture and handmade chocolate. When the chocolate is firm, you will cover it and let it firm again. While the chocolate is getting hard, we will prepare to pack it up. After the chocolate is hard, you can enjoy your liquor chocolate and pack it to take back home with you.
I've been working at a whisky company for 10 years in South Korea. One day during a class for my job, I learned about liquor chocolate. After class, I was disappointed because I couldn't use the recipe due to a lump of sugar. After a lot of hard work, I developed a new recipe without sugar and I patented it. Instead, I use Chochung—a sweet syrup and traditional food in Korea. Finally, I was able to make liquor chocolates. My wife opened a small chocolate shop over five years ago, and I naturally help her after work. This experience will teach you how to make your own night cap—Korean style.
