What you'll do

My cookery classes are a combination of know-how, food chat and fine food covering Catalan, Spanish and wider Med cooking. Something for everyone whatever your talents. In our 4-hour morning classes, firstly a freshly squeezed juice + breakfast as we say hello and you get over the shock of my tattoos! Here we'll be serving Wild Mushrooms on toasted Pan de Coca. Being based in Sitges' perfect- sized indoor market, we'll take a tour for 30 minutes. I buy almost all my produce here and I've known many of the traders for years. Then we prepare the dishes. Not the sort of class where we all have a chopping board and knife; sure everyone can help with something and we'll move at a pace to suit you, but most of all I want to inspire you. I’m likely to have traveled up to the foothills of the Pyrenees a day or so earlier, so hopefully laden with the freshest of the new season’s mushrooms. We are so lucky in Sitges to be able to buy great fresh wild mushrooms here too; and even out of season the market stocks a good variety of dried ones. We'll cook 6 dishes that will look something very close to this: Mushroom Soup with Garlic Croutons Wild Mushroom Risotto Chicken & Mushroom Empanadillas Pappardelle + creamy wild Mushroom Sauce Wild Mushroom & wild Game Cazuela Wild Mushroom Strudel

The former marketing guy immersed in London dining (on expenses). So in love with cooking and food, I later trained for 2 years to become a chef. Then came the private dining restaurant and a specialist restaurant marketing consultancy. For the last 25 years I've worked in small and large kitchens, maybe setting up a new menu or concept; sometimes running the operation. Brought up in the Med, I later knew that simply travelling around its shores wouldn't be enough to satisfy my love for its lifestyle and especially its food. So in 2002 I moved to Sitges. Sometimes I can be found working in London, but my home and heart is here cooking by the Med. For as long as I can remember I've been asked for my recipes and ideas, engaging in food chat. I could not ask for more than my cookery school to be in the town´s central market. Ricky M

Where you'll be

Most of my classes are based in Sitges' air conditioned indoor market. That's where our purpose built demo kitchen is. If we run out of something...no problem. This is true market cooking. We´ll do a market tour before we start cooking plus a chance to take a 15 minute break and walk around the market again, maybe take a coffee.
