What we’ll do

We will make, shape, and bake wholemeal and white bread using 100% organic, stoneground flours from Cann Mills—the location of our school. We will continue our dough journey and make sweet buns using a traditional English method—the ferment. During the workshop, we will explore yeast, fermentation, and flour. You will have plenty of hands-on shaping practice as we guide you through dough…

Our pop-up shop will be open toward the end of the day where you can buy equipment and stoneground flour.

What I’ll provide

Snacks and Other
Lunch. Baked goods We'll provide lunch, and vegetarian and vegan options will be available. Just tell us your needs or preferences when booking.. Take home everything you bake. Just remember to bring along a big box to fit it all in.
Drinks
Drinks We'll provide tea, coffee, spring water, and a range of herbal infusions.
Equipment
Ingredients and equipment From bowls to bannetons, we'll provide everything you "knead"—including a linen Panary apron to take home and keep.

Where you'll be

We'll be on the grounds of a traditional water mill near Shaftesbury, Dorset. It is one of the most tranquil places you could wish to learn about real bread. Indeed, most of the organic bread flour we will use in the course will have been milled some weeks earlier using French-style mill stones. While you're in the area, you may also like to visit Gold Hill, from the old Hovis TV ad, and the many National Trust properties in Dorset and Wiltshire.
