What you'll do
We will meet at my home set in the heart of the countryside and learn how to make the age old traditional Irish dish, beef and guinness stew. This is a lovely old recipe for a heart warming winter stew. We will prepare it all together, taking care to only use locally and ethically sourced ingredients, organic beef, locally grown veg etc. After prep is complete we can put it on the oven to slow cook, the flavours all marinate together this way. Then we will head out with our little dog moby and take a good walk around the ocean here, the wild atlantic in the shadow of the cliffs of moher, work up a good appetite. If weather permits we will take a walk up onto the cliffs themselves. If not the walk around the ocean here is bracing, sea caves, gulls crashing into the waves, hardly a soul around. It's good for the soul no matter what the weather. Afterwards, we will return home to our supper, bowls of piping hot Guiness & Beef Stew. You will all receive a hard copy of the recipe so you can re-create it at home no matter where in the world you live. It's the perfect Autumnal day out, the old fashioned way. This experience will really appeal to you if you love hiking, nature, photography and good hearty food using the best organic ingredients possible. It's a way of life.
Hi, my name is Ro. I live in the most beautiful and wild part of Ireland, beside the iconic Cliffs of Moher. My two favourite things to do are to cook and to hike. I've set up and/or managed a few cafe's and restaurants down through the years with the focus always on good locally sourced ingredients. I love cooking and entertaining. Nowadays, my main job is hiking and guiding around The Cliffs and I cook for fun. It's a lovely country life. My little doggy Moby is my best friend and although he can't cook he loves to eat and loves to walk or swim in the ocean with me. Come autumn/winter time my focus switches back to food mostly instead of hiking. I'm always dreaming up new variations on classic winter dishes. I'd like to share this with you, a perfect winters day.

Where you'll be
Our cooking workshop will happen in my lovely home in the countryside. It's a big spacious house inducing relaxation and comfort. Once the stew is on the oven we will head out. Our walk will either take us around the wild atlantic ocean in a remote rural setting or else upto the cliff edge, weather permitting. Ive been working as a guide here for 15 years. The experience ends back at my house again for our lovely supper together.

Please advise in advance of any food allergies. This is not suitable for children. I keep the classes really small so you really learn properly how to cook this dish. Wow your friends back home with this classic Irish dish, cooled to absolute perfection. Bring good comfortable walking shoes.
